Place slices on a griller and drizzle little oil on top. Cover and grill on both sides for 2-3 minutes. Remove from heat and cool down to room temperature. Mix cottage cheese, walnuts, cheese, crushed peppercorns, salt, lemon rind, lemon juice and mint leaves well in a bowl. Place grilled zucchini slices on worktop. Place some cottage cheese mixture on one side of each and roll tightly. Serve immediately.
