Grease a cake tin with oil. In a medium sized bowl mix together grated carrot, chopped pineapple. Add orange juice and mix. Add sugar, coffee powder and mix. Break the egg into it and mix. Sieve flour and baking soda into the egg mixture. Mix with a light hand. Add cinnamon powder, a pinch of salt and mix. Add oil and mix. Pour the batter into the greased cake tin. In another bowl mix together chopped walnuts, sugar and cinnamon powder. Sprinkle this over the cake batter. Bake in the preheated oven at 180°C for twenty to twenty five minutes. Cool slightly.
