Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Gobhi With Matar Recipe

  • Cauliflower separated into florets 1 medium

  • Green peas 1 cup

  • Oil 2 tablespoons

  • Onions chopped 2 medium

  • Garlic paste 1 teaspoon

  • Ginger paste 1 teaspoon

  • Turmeric powder 1 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Salt to taste

  • Garam masala powder 1 teaspoon

  • Green chillies chopped 4

  • Tomato finely chopped 1

  • Fresh coriander leaves for garnish

Method

Step 1

Heat oil in a non-stick pan. Add onions, garlic paste and ginger paste and saute till onions turn golden brown in color.

Step 2

Add turmeric powder, red chilli powder, salt and garam masala powder and mix well.

Step 3

Add green chillies and tomatoes and cook on low heat.

Step 4

Add a tablespoon of water and cook till the tomatoes get cooked.

Step 5

Add the cauliflower and green peas and cover and cook till the cauliflower gets cooked. Serve hot garnished with coriander leaves.
