Ingredients list for Galouti Burgers

  • 400 grams Mutton mince (keema)
  • 4 Pavs
  • 2 teaspoons Caraway seeds (shahi jeera)
  • 10-12 Green cardamoms
  • 8-10 Cloves
  • 10-12 Black peppercorns
  • 3-4 blade mace (javitri)
  • 2 teaspoons Fennel seeds (saunf)
  • 3-4 Stone flower (dagad phool)
  • 3-4 Star anise
  • 1 inch Cinnamon
  • 1 tablespoon Dried rose petals
  • 1 tablespoon khus ki jadh
  • 3-4 kabab chini
  • 1 teaspoon Kachri powder
  • 2-3 Black cardamoms
  • 2 teaspoons Garlic chopped
  • ¼ cup Raw papaya paste
  • 1 cup Fried onions
  • 1 teaspoon Red chilli powder
  • to taste Salt
  • 1 tablespoon cashewnut-charoli-poppy seeds (khuskhus) paste
  • 2 tablespoons Saffron (kesar) water
  • 2 teaspoons Rose water
  • ½ cup Gram flour (besan) roasted
  • as required Ghee
  • as required Oil
  • For topping Mint chutney
  • For topping Mayonnaise
  • 4 Iceberg lettuce leaves
  • 4 Tomato roundels
  • 4 Onion roundels

Method

  1. Grind together caraway seeds, green cardamoms, cloves, black peppercorns, mace, fennel seeds, stone flower, star anise, cinnamon, dried rose petals, khus ki jadh, kabab chini, kachri powder and black cardamoms to a fine powder.
  2. Heat a piece of coal on direct flame.
  3. 3. Take mutton mince in a bowl. Add garlic, raw papaya paste, fried onions, chilli powder, 2½ tablespoons ground spice powder, salt, cashewnut-charoli-poppy seeds paste, saffron water, rose water and gram flour and mix well.
  4. Take the mince mixture on a plate and make a well in the center. Place a glass bowl in it, put the hot charcoal in it and pour some ghee on it. Cover immediately and set aside for a few minutes.
  5. Heat some oil on a non-stick tawa.
  6. Divide the mutton mixture into equal portions and shape into patties.
  7. Place the patties on the hot tawa and shallow-fry on low heat, turning sides,till evenly golden and cooked on both sides.
  8. Halve the pavs horizontally.
  9. Heat some oil in a non-stick pan and roast the halved pavs from both sides till light golden.
  10. Spread some mint chutney on the base half of each roasted pavs. Spread some mayonnaise on the top half of each pav.
  11. Place a lettuce leaf and1 mutton patty on the base half of each bun. Spread some mint chutney on top of the patty and place 1 tomato roundel and 1 onion roundel and cover with the top half of each bun.
  12. Serve immediately.
