Ingredients list for Gajar Aur Tamatar Ka Shorba

  • 2 medium Carrot
  • 3 medium Tomatoes
  • 4 small Potatoes
  • 1 tablespoon Butter
  • 1 inch piece Ginger
  • 8-10 Coriander stems
  • 6-8 Black peppercorns
  • to taste Salt
  • 3 cups Vegetable stock

  1. Heat a pressure cooker. Diagonally slice carrots and roughly chop tomatoes and put them into the cooker.
  2. Chop potatoes and ginger and add. Add butter. Add fresh coriander stems, black peppercorns, salt, vegetable stock.
  3. Close the lid of the cooker and cook under pressure till 4 whistles are given out. When the pressure reduces, open the lid and strain some of the stock into a bowl.
  4. Blend the rest in the cooker with a hand blender. Add the strained stock and blend again.
  5. Strain the soup into a deep bowl, then pour into soup cups and serve piping hot.
