Ingredients list for Fig Bread

  • 1 cup Dried figs soaked and pureed
  • 4 cups + for dusting Refined flour (maida)
  • 1 tablespoon Fresh yeast
  • 1 teaspoon Castor sugar (caster sugar) A pinch +
  • ½ teaspoon Salt
  • 1 teaspoon Cumin seeds
  • 1 tablespoon Milk powder
  • for greasing Butter ¼ cup + for brushing and

Method

  1. Take yeast in a small bowl. Add a pinch of castor sugar ad 2-3 tablespoons water, mix well and set aside to activate.
  2. Put flour in an electric dough maker. Add salt, 1 teaspoon castor sugar, cumin seeds, milk powder, activated yeast, butter and pureed figs and process.
  3. Add some water and process until a soft dough is formed. Transfer into a bowl, cover with cling film and set aside to prove for 20 minutes.
  4. Grease a loaf tin with some butter and dust with some flour.
  5. Dust the worktop with some flour, transfer the dough and knock back to release excess air.
  6. Shape it into a thick log and put into the greased tin, cover with cling film and set aside to prove for 15-20 minutes.
  7. Preheat oven to 180° C.
  8. Brush the surface with some butter, place the tin in the preheated oven and bake for 10-15 minutes. Remove from oven, cool and demould.
  9. Slice and serve.
