Coconut Squares with Blueberries Delicious coconut squares mixed with blueberries and oats. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 14 Nov 2016 in Recipes Course New Update Main Ingredients Desiccated coconut, Refined flour (maida) Cuisine Fusion Course Desserts Prep Time 16-20 minutes Cook time 51-60 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Advertisment Ingredients list for Coconut Squares with Blueberries 75 grams Desiccated coconut 1¼ cups Refined flour (maida) 1 cup Blueberries for greasing Butter 2 tablespoons Oats 280 grams brown sugar/jaggery 200 grams Butter cut into pieces 2 Eggs Method Advertisment Preheat oven to 180° C. Grease a barfi tray with some butter. Combine flour, oats and brown sugar in a bowl and mix. Add butter and mix with your hands till it resembles breadcrumbs. Add coconut, mix and wrap the mixture with a cling film. Refrigerate for ten to fifteen minutes. Transfer the mixture into a bowl, add eggs and half of blueberries and mix well. Transfer the prepared mixture onto the greased tray and level it out using the back of the spoon. Spread remaining blueberries on top and place the tray on a baking tray. Put the baking tray in preheated oven and bake for fifty to fifty-five minutes. Remove from oven, cool and cut into squares. Serve.
