Chinese Chicken Sausage Rice

Chicken and chicken sausages cooked with rice, mushrooms and some aromatics to make a delicious one-pot meal. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Chinese Chicken Sausage Rice

  • 200 grams Boneless chicken cut into cubes
  • 2-3 Chicken sausages sliced
  • 1½ cups Basmati rice soaked for 30 minutes
  • 2 tablespoons Sesame oil (til oil)
  • 1 tablespoon Garlic chopped
  • 1 medium Onion finely chopped
  • 1 tablespoon Cornflour
  • 4 cups Chicken stock
  • to taste Salt
  • to taste Crushed black peppercorns
  • 5-6 Button mushrooms sliced
  • 1 tablespoon Oyster sauce
  • 2-3 teaspoons Soy sauce
  • 1 teaspoon Vinegar
  • to serve Fried noodles

Method

  1. Heat sesame oil in a non-stick pan. Add garlic and sauté till golden. Add onion and sauté on high heat till golden.
  2. Add chicken, mix and cook on high heat for 1-2 minutes. Add drained rice, mix and cook for 1 minute. Reduce heat and cook for 1-2 minutes.
  3. Take cornflour in a bowl. Add ¼ cup stock and mix well to make a smooth slurry.
  4. Heat remaining stock in a microwave for 1 minute.
  5. Add salt and crushed peppercorns to rice mixture and mix. Add remaining chicken stock, mix, cover and cook on medium heat for 5 minutes or till rice is halfdone.
  6. Add chicken sausage and mushrooms and mix. Add oyster sauce and soy sauce, mix, cover and cook for 5 minutes or till the rice is done.
  7. Add slurry and vinegar, mix, cover and cook for 1 minute.
  8. Serve hot with fried noodles.
