The capital city of Himachal Pradesh in India, Shimla has many farms of capsicum. Hence, the Hindi name. Besides this, though not loved by all, this veggie is the most essential whenever you plan to dish-up an Indo-Chinese recipe. Stuff them up with cheese, beans, other veggies or meats or just make a simple sabzi, it will surely add that exciting crisp to your creations!

Ingredients for Chilli Vegetable Skewers Recipe

  • Green capsicums seeded and cut into triangles 2 medium

  • Babycorns cut into dices 7-8

  • Mushrooms stems removed and cut into halves 8-10

  • Cornflour/ corn starch ¼ cup + 1

  • Refined flour (maida) 1/4 cup

  • Oil 1 tablespo

  • Garlic chopped 1 tablespoon

  • Ginger chopped 1 inch

  • Green chillies chopped 2

  • Tomato ketchup 3 tablespoons

  • Red chilli sauce 1 tablespoon

  • Sugar a pinch

  • Vinegar 1 teaspoon

Method

Step 1

Skew the vegetables onto skewers in this order – babycorn, capsicum and mushrooms.

Step 2

Combine ¼ cup cornflour, refined flour and salt in a bowl. Add sufficient water to make a smooth batter.

Step 3

Heat sufficient oil in a kadai. Dip skewers in the batter and deep-fry in hot oil till golden and crisp. Drain on absorbent paper.

Step 4

Heat 1 tablespoon oil in a non-stick pan. Add chopped garlic, ginger and green chillies. Mix well and sauté for 2-3 minutes.

Step 5

Add tomato ketchup and red chilli sauce and mix well.

Step 6

Add little water, stir to mix and cook.

Step 7

Add water to 1 tablespoon cornflour and mix well to make a slurry.

Step 8

Add salt, sugar and vinegar in the pan and mix well. Add slurry, mix well and cook till the sauce thickens.

Step 9

Add skewers with fried vegetables and mix gently.

Step 10

Serve hot.
