Chilled Gazpacho Soup A Spanish delicacy – this cold soup is excellent to have on a hot summer day. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 06 Jul 2016 in Recipes Course New Update Advertisment Main Ingredients White bread slices, Tomatoes Cuisine Spanish, , , , Course Soups Prep Time 0-5 minutes Cook time 41-50 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Chilled Gazpacho Soup 6 slices White bread slices 6 medium Tomatoes quartered 1 medium Cucumber roughly chopped 3-4 Garlic cloves chopped 1/2 cup Olive oil to taste Salt to taste Crushed black peppercorns 1 medium Green capsicum seeded and roughly chopped 2 tablespoons Wine vinegar For the garnish 1 slice White bread slices cut into ½-inch cubes 1 small Green capsicum chopped 1 small Onion chopped Method Discard edges of bread slices, break into pieces and place in a bowl. Add water and soak the bread pieces for 5 minutes. Combine tomatoes, cucumber, garlic, soaked bread pieces, olive oil, salt, crushed peppercorns and water in a blender. Blend well. Add capsicum and vinegar and blend again. Strain the soup into a bowl and chill in a refrigerator. Pour the soup into individual Martini glasses. Garnish with bread cubes, chopped capsicum and chopped onion.
