Ingredients list for Chicken Nachos

  • 250 grams Boneless chicken
  • 1 cup Nachos
  • 1½ teaspoons Oil
  • 1 medium Onion
  • 7-8 Garlic cloves chopped
  • 1 medium Green capsicum
  • 1 medium Red bell pepper
  • to taste Salt
  • to taste Crushed black peppercorns
  • 2 teaspoons Paprika powder
  • ½ cup Fresh cream
  • 2-3 Pickled jalapenos sliced
  • ¾ cup Mozzarella cheese grated

Method

  1. Preheat oven at 200ºC.
  2. Heat oil in a non-stick pan.
  3. Slice onion.
  4. Add garlic to the pan and saute for a minute.
  5. Cut capsicum into juliennes.
  6. Add sliced onion to the pan and toss for a minute.
  7. Cut bell pepper into juliennes.
  8. Add capsicum and pepper juliennes to the pan and toss to mix. Saute for 2 minutes.
  9. Cut chicken breasts into juliennes and add to the pan. Mix well and cook for 2-3 minutes.
  10. Add salt, crushed peppercorns and paprika powder and toss to mix. Cook till the chicken is fully done.
  11. Add cream and mix well. Switch off heat.
  12. Place nachos in a glass baking dish. Top with cooked chicken mixture, jalapeno slices and mozzarella cheese. Put dish in preheated oven and bake till the cheese melts.
  13. Serve hot.
