By Sanjeev Kapoor 06 Jul 2016 in Recipes Course New Update Main Ingredients Boneless chicken breast, Apples Cuisine Fusion, , , , Course Main Course Chicken Prep Time 16-20 minutes Cook time 21-25 minutes Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Chicken Grilled with Apple and Leek 1 Boneless chicken breast 1 medium Apples peeled, cored and cut into thin slices 1 stalk Leek finely chopped + to deep fry Olive oil 1 tablespoon to taste Salt 1 teaspoon Mixed herbs to taste Black pepper powder 1 tablespoon Garlic 1 medium Green zucchini sliced ½ medium Carrot peeled and cut into juliennes 2 stalks Asparagus cut into pieces ½ cup Chicken stock 1 tablespoon brown sugar/jaggery 1 tablespoon Vinegar 2 tablespoons Butter Method Slit chicken horizontally and open the flaps. Place on a plate, add 1 tablespoon olive oil, salt, ½ teaspoon dried herbs, pepper powder and garlic. Rub well and set aside to marinate for 5-10 minutes. Heat some olive oil in a non-stick grill pan. Place marinated chicken on it and grill till evenly done from both sides. In the same pan, add zucchini, carrot and asparagus and grill for 2 minutes. Add pepper powder and salt, mix well and remove from heat. Set aside. Heat chicken stock in a non-stick pan. Add leek and bring to a boil. Add ½ tablespoon brown sugar, vinegar and salt, stir to mix and cook for 2-3 minutes. Remove from heat and set aside. Heat butter in another non-stick pan. Add apple slices and stir, cook for 5 minutes. Add remaining brown sugar and remaining herbs, mix well and cook for 1-2 minutes. Remove from heat. Place grilled chicken on a serving platter. Top with cooked leek and add cooked apple slices on top.
