Ingredients list for Chicken Grilled with Apple and Leek

  • 1 Boneless chicken breast
  • 1 medium Apples peeled, cored and cut into thin slices
  • 1 stalk Leek finely chopped
  • + to deep fry Olive oil 1 tablespoon
  • to taste Salt
  • 1 teaspoon Mixed herbs
  • to taste Black pepper powder
  • 1 tablespoon Garlic
  • 1 medium Green zucchini sliced
  • ½ medium Carrot peeled and cut into juliennes
  • 2 stalks Asparagus cut into pieces
  • ½ cup Chicken stock
  • 1 tablespoon brown sugar/jaggery
  • 1 tablespoon Vinegar
  • 2 tablespoons Butter

Method

  1. Slit chicken horizontally and open the flaps. Place on a plate, add 1 tablespoon olive oil, salt, ½ teaspoon dried herbs, pepper powder and garlic. Rub well and set aside to marinate for 5-10 minutes.
  2. Heat some olive oil in a non-stick grill pan. Place marinated chicken on it and grill till evenly done from both sides.
  3. In the same pan, add zucchini, carrot and asparagus and grill for 2 minutes. Add pepper powder and salt, mix well and remove from heat. Set aside.
  4. Heat chicken stock in a non-stick pan. Add leek and bring to a boil. Add ½ tablespoon brown sugar, vinegar and salt, stir to mix and cook for 2-3 minutes. Remove from heat and set aside.
  5. Heat butter in another non-stick pan. Add apple slices and stir, cook for 5 minutes. Add remaining brown sugar and remaining herbs, mix well and cook for 1-2 minutes. Remove from heat.
  6. Place grilled chicken on a serving platter. Top with cooked leek and add cooked apple slices on top. Place the grilled vegetables on the side and serve immediately.
