Ingredients list for Chicken Fingers

  • 4 Chicken Breasts cut into fingers
  • to taste Cornflakes
  • 2 teaspoons Red chilli powder
  • 1 1/2 teaspoons Crushed black peppercorns
  • 1 teaspoon Mustard powder
  • 1 teaspoon Garlic,finely chopped
  • 1 teaspoon Lemon juice
  • 1/4 cup Whole wheat flour (atta)
  • 1/2 cup Corn flakes
  • 3/4 cup Almonds sliced
  • 2 teaspoons Egg white

Method

  1. Preheat oven to 180°C. Place chicken fingers in a bowl, add salt, 1 tsp red chilli powder, 1 tsp crushed black peppercorns, ½ tsp mustard powder, garlic and lemon juice and mix well.
  2. In a bowl, combine whole wheat flour, salt, remaining red chilli powder, remaining crushed black peppercorns and remaining mustard powder.
  3. Crush cornflakes in a mortar pestle. Add flour mixture and almonds and mix well.Add egg white to the chicken fingers and mix. Roll them in the flour mixture and dust off excess.
  4. Place a silicon sheet on a baking tray. Place the chicken fingers on it and brush them with extra virgin olive oil. Place the tray in the preheated oven and bake for 15-20 minutes. Serve hot.
