By Sanjeev Kapoor 08 Nov 2016 in Recipes Course New Update " frameborder="0" allowfullscreen> Main Ingredients Boneless chicken, Coconut milk Cuisine Thai Course Soups Prep Time 11-15 minutes Cook time 11-15 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Chicken Coconut Milk Soup 100 grams Boneless chicken cut into thin strips 2 cups Coconut milk 3 cups Chicken stock 5-6 Kaffir lime leaves 2 stalks Lemon grass 1 inch Galangal sliced 1 tablespoon Fish sauce to taste Salt 2 Fresh red chillies finely chopped 2 tablespoons Fresh coriander leaves chopped 1 stalk Spring onion green finely chopped Method Heat chicken stock in a deep non-stick pan. Add kaffir lime leaves. Roughly chop lemongrass and add, stir and bring to a boil. Add galangal, chicken strips and stir to mix. Reduce heat and simmer for 5 minutes. Add fish sauce and stir well. Adjust salt, stir to mix and add coconut milk. Simmer for 2-3 minutes. Add red chillies, 1 tablespoon chopped coriander and spring onion green, stir to mix and simmer for a minute. Garnish with remaining chopped coriander and serve piping hot.
