Ingredients list for Carrot Cake

  • 2 cups Carrots grated
  • 2 Eggs
  • 150 grams Nutralite softened
  • 150 grams Sugar
  • 150 grams Refined flour (maida)
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Baking soda
  • 1/2 teaspoon Cinnamon powder
  • a pinch Mace powder
  • a pinch Salt
  • 1/2 cup Orange juice
  • 1/4 cup Walnuts finely crushed

Method

  1. Preheat oven to 180º C.
  2. Break the eggs and separate yolks and whites and keep in two separate bowls.
  3. Cream together the Nutralite and sugar in a deep bowl till fluffy and light in colour with the help of electric beater. Add the egg yolks and mix well.
  4. Sift together the refined flour, baking powder, baking soda, cinnamon powder and mace powder into another bowl.
  5. Beat the egg whites with a little salt till stiff and they stand in peaks.
  6. Add the carrots to the Nutralite-egg mixture and mix well. Add the orange juice and mix.
  7. Add the flour mixture and mix well. Add the walnuts and mix. Fold in the egg whites gently.
  8. Pour the batter into a silicon mould and bake in the preheated oven for about fifty minutes.
  9. Remove the mould from the oven and let it stand for an hour.
  10. Remove the cake from the mould, slice and serve.
