Caesar Devil Eggs

Ingredients list for Caesar Devil Eggs

  • 4 Eggs hardboiled and peeled
  • 1 tablespoon Garlic chopped
  • 1 teaspoon Capers
  • 1 teaspoon Mayonnaise
  • 1 teaspoon Red wine vinegar
  • 1 teaspoon Parmesan cheese powder
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Crushed black peppercorns
  • 2-3 Lettuce leaves romaine, torn

Method

  1. Halve eggs, separate yolks and put into a bowl and place the whites on a serving platter.
  2. Mash the egg yolks, add garlic, capers and whisk with an electric beater. Add mayonnaise and mix well.
  3. Add red wine vinegar and whisk. Add parmesan cheese powder and whisk again. Add olive oil and whisk. Add 1 tablespoon water and whisk well.
  4. Add salt and crushed peppercorns and whisk well.
  5. Fill a piping bag fitted with star nozzle with the yolk mixture and pipe it out into the egg white shells. Place a torn lettuce leaf over reach shell.
  6. Serve immediately.
