Ingredients list for Breakfast Bread Cheese Balls

  • ½ cup Mozzarella cheese grated
  • 4 White bread slices
  • ½ cup Processed cheese grated
  • 1 tablespoon Fresh coriander leaves finely chopped, 2 teaspoons +
  • 1 teaspoon Green chilli finely chopped
  • 1 teaspoon Crushed black peppercorns
  • ½ teaspoon Garlic finely chopped
  • 5 teaspoons Onion finely chopped
  • 2-3 medium Potatoes boiled, peeled and mashed
  • to taste Salt
  • to deep fry Oil
  • 1 cup Bread crumbs
  • Juice of 1 lemon
  • 8-9 Cherry tomatoes halved
  • a few Lettuce leaves
  • 1 tablespoon Olive oil

Method

  1. Put mozzarella cheese, processed cheese, 2 teaspoons coriander leaves, green chillies, crushed peppercorns, garlic and onion in a bowl and mix well.
  2. Divide the mixture into equal portions, shape them into small balls and refrigerate for 10-15 minutes.
  3. Take bread slices in a bowl and add water to it. Soak them for a while and squeeze out the water and place in another bowl. Mash them.
  4. Add potatoes and mix well. Add 1 tablespoon coriander leaves, salt and mix well.
  5. Heat sufficient oil in a kadai.
  6. Divide the bread-potato mixture into equal portions. Make a dent in them and place the cheese balls in them. Shape them again into larger balls.
  7. Spread breadcrumbs on a plate. Coat the balls in it, dust off the excess and deep-fry in hot oil till golden and crisp. Drain on absorbent paper.
  8. Combine lemon juice, cherry tomatoes, some lettuce leaves, olive oil and salt in a bowl. Toss well.
  9. Place the lettuce salad on a serving dish. Halve the fried cheese balls and put them on the dish. Serve immediately.
