Hindi: baingan
Also called by names like aubergine and eggplant, this purple hued fleshy vegetable is a versatile thing and fun to cook with. Dish-up a very traditional bharta with it, bake a lasagna with parmesan and eggplant or just fry it for a great accompaniment with dal-chawal, brinjal is versatile. To choose one without seeds, pick the lighter one with a smooth shiny skin.

Ingredients for Bhugi Recipe

  • Brinjals chopped 1 large

  • Onions chopped 2 medium

  • Potatoes peeled and diced 2 medium

  • Green peas ½ cup

  • Oil 2 tablespoons

  • Green chillies chopped 2-3

  • Ginger chopped 1 inch

  • Asafoetida ¼ teaspoon

  • Garam masala powder ½ teaspoon

  • Red chilli powder ½ teaspoon

  • Coriander powder 1 teaspoon

  • Salt to taste

Method

Step 1

Heat oil in a non-stick pan. Add onions and sauté till golden.

Step 2

Add green chillies, ginger and asafoetida and mix well. Add little water and mix well.

Step 3

Add garam masala powder, chilli powder and coriander powder and mix well. Add little water, mix and cook till the oil separates.

Step 4

Add brinjal, potatoes and green peas and mix well. Add little water, mix, cover and cook till the vegetables are fully done.

Step 5

Add salt, mix well and let it get heated through.

Step 6

Serve hot garnished with a coriander sprig.
