Ingredients

  • Cooked rice
    3 cups
  • Sev
    1/4 cup
  • Onion
    1 medium
  • Oil
    2 tablespoons
  • Cloves
    4-5
  • Cumin seeds
    1 teaspoon
  • Mustard seeds
    1/2 teaspoon
  • Asafoetida
    a pinch
  • Turmeric powder
    1/4 teaspoon
  • Curry leaves
    15-20
  • Carrot cut into small cubes
    1/2
  • French beans cut into small pieces

  • Green peas
    1/4 cup
  • Salt
    to taste
  • Red chilli powder
    1/4 teaspoon
  • Boondi
    1/4 cup
  • Lemon

Method

Step 1


Chop onion finely. Heat oil in a non-stick pan, add cloves, cumin seeds, mustard seeds, asafoetida and onion and sauté for ½ minute.

Step 2


Add turmeric powder, curry leaves and sauté for 2-3 minutes.

Step 3


Add carrot, French beans and green peas and stir.

Step 4


Add rice, salt, red chilli powder and mix well.

Step 5


Add boondi and juice of a lemon and mix well.

Step 6


Transfer into a serving dish.

Step 7


Sprinkle sev on top and serve hot with chilled yogurt or any raita.
