Ingredients list for Banana Yogurt Muffins

  • 2 Bananas
  • 1 cup Yogurt
  • 1¾ cups Refined flour (maida)
  • ½ cup Butter
  • ½ cup Castor sugar (caster sugar)
  • 1 Egg beaten
  • 1 teaspoon Vanilla essence
  • ½ teaspoon Baking soda
  • ¼ cup Chocolate chips

Method

  1. Preheat oven to 180ºC.
  2. Cream together butter and sugar in a bowl till light and fluffy.
  3. Add egg and vanilla essence and beat till well incorporated.
  4. Sift together the flour and baking soda in another bowl. Add chocolate chips and mix.
  5. Add the flour mixture and yogurt to the butter-sugar mixture and beat well.
  6. Peel and roughly chop bananas and add to the bowl. Beat again to make a smooth batter.
  7. Spoon the batter into individual muffin moulds upto ¾ full, place them on a baking tray, place the tray in the preheated oven and bake for 15-20 minutes. Remove from oven and cool.
  8. Demould and serve.
