Baked Matar Paneer Bread Rolls

Spicy green peas-cottage cheese mixture rolled in bread slices and baked.It’s a healthy version of bread rolls. You could have them with your evening tea / coffee as a light snack. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Baked Matar Paneer Bread Rolls

  • 1/2 cup Green peas (matar), blanched
  • 1 cup Paneer (cottage cheese) grated
  • 4 Brown bread slices
  • for greasing Oil
  • to taste Salt
  • 1/2 teaspoon Castor sugar (caster sugar)
  • to taste Crushed black peppercorns
  • 1/2 teaspoon Carom seeds (ajwain)
  • 1-2 Green chillies finely chopped
  • 1 tablespoon Fresh coriander leaves chopped
  • 1 tablespoon Cheddar cheese grated
  • 1/2 tablespoon Fresh cream
  • as required Milk

Method

  1. Preheat oven at 180ºC. Grease a baking tray with some oil.
  2. Combine cottage cheese and green peas in a bowl and mix well and mash. Add salt, castor sugar, crushed peppercorns, carom seeds, green chillies, chopped coriander and cheese and mix well. Add cream and mix well.
  3. Soak bread slices in milk, squeeze the excess and flatten them with a rolling pin. Spread a portion of the prepared cottage cheese mixture on it and roll tightly.
  4. Place them on the greased baking tray, put the tray in the preheated oven and bake for 10-15 minutes.
  5. Remove from heat, cut into halves diagonally and serve hot with tomato ketchup.
