Ingredients list for Apple Strudel Muffins

  • 1½ cups Apple chopped
  • + 2 tablespoons Refined flour (maida) 1 cup
  • 1 tablespoon Butter ½ cup +
  • ¾ cup Castor sugar (caster sugar)
  • 2 Eggs
  • 1¼ teaspoons Vanilla essence
  • ½ teaspoon Baking soda
  • 1 teaspoon Baking powder
  • ½ teaspoon Cinnamon powder
  • ? cup brown sugar/jaggery
  • for dusting Icing sugar

Method

  1. Preheat oven to 180ºC. Line a baking tray with individual silicon muffin moulds.
  2. Cream together ½ cup butter and castor sugar in a bowl till light. Add eggs and beat until smooth.
  3. Add 1 tablespoon flour to apples and mix. Set aside.
  4. Add vanilla essence to butter-sugar mixture and mix.
  5. Sift together 1 cup flour, baking soda and baking powder into the butter-sugar mixture. Add ¼ teaspoon cinnamon powder and fold well.
  6. Add floured apples and mix well.
  7. Take brown sugar in a bowl. Add 1 tablespoon flour, remaining cinnamon powder and 1 tablespoon butter and mix till the mixture resembles coarse crumbs.
  8. Fill in the muffin moulds with the prepared apple mixture and top with the brown sugar crumbs. Put the tray in the preheated oven and bake for 15-20 minutes. Remove from oven, cool and demould.
  9. Dust with icing sugar and serve.
