By Sanjeev Kapoor 17 Dec 2014 in Recipes Course New Update Main Ingredients Potatoes, Kokum petals Cuisine Maharashtrian Course Main Course Vegetarian Prep Time 11-15 minutes Cook time 11-15 minutes Serve 4 Taste Tangy Level of Cooking Easy Others Veg Ingredients list for Ambat Batata 5-6 medium Potatoes boiled, peeled and cubed Kokum petals 3 tablespoons Oil 1 teaspoon Cumin seeds 1/2 teaspoon Mustard seeds 10-15 Curry leaves 2 medium Onions chopped 2 Green chillies chopped 1/2 teaspoon Turmeric powder to taste Salt 1/2 cup Yogurt 4-5 Kokum petals 1/4 cup Coconut scraped 2 teaspoons Lemon juice Method Heat the oil in a non stick pan. Add the cumin seeds and mustard seeds. When they splutter add the curry leaves and onions and sauté for a minute. Add the green chillies and turmeric powder and sauté till the onions are lightly coloured. Add the potatoes, salt, yogurt and kokum and mix. Cook for two to three minutes. Add the coconut and lemon juice and toss well. Serve hot.
