Ingredients list for Aloo Palak Methi

  • 2 medium Potatoes boiled, peeled and diced
  • 1/2 medium bunch Spinach leaves (palak)
  • 1 medium bunch Fenugreek leaves (methi), chopped
  • 2 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 2 medium Onions, finely chopped
  • 1 inch piece Ginger, chopped
  • 1 tablespoon Garlic, chopped
  • to taste Salt
  • 1 teaspoon Green chillies, chopped
  • a pinch Turmeric powder
  • 1 teaspoon Red chilli powder
  • 1/4 cup Spinach puree
  • 3 tablespo Yogurt

  1. Chop spinach leaves. Heat oil in a non-stick pan. Add cumin seeds and onions. Sauté till onions are soft.Add ginger and garlic. Mix well.
  2. Add chopped spinach and fenugreek leaves. Mix well.
  3. Add salt, green chillies, turmeric powder and red chilli powder. Mix well and cook for 1-2 minutes.
  4. Add spinach puree and mix well. Add 1/4 cup of water and potatoes. Mix well and cook for 2-3 minutes.
  5. Whisk yogurt and add to pan. Mix well and cook till done.
  6. Serve garnished with yogurt.
