You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Akuri Recipe

  • Eggs 4

  • Oil 2 teaspoons

  • Onion finely chopped 1 medium

  • Green chillies finely chopped 1-2

  • Fresh coriander leaves chopped, 1 tablespoon + 1 teaspoon

  • Turmeric powder ¼ teaspoon

  • Red chilli powder 1 teaspoon

  • Cumin powder ½ teaspoon

  • Salt to taste

  • Butter 1 tablespoon

  • Bread toasts 4

Method

Step 1

Heat oil in a non-stick pan. Add onion and green chillies and sauté till onion turns golden.

Step 2

Add tomato and sauté for 1 minute. Add 1 tablespoon coriander leaves and sauté for 30 seconds.

Step 3

Add turmeric powder, chilli powder and cumin powder, mix well and sauté for 1 minute.

Step 4

Break eggs into a bowl, beat well and add to pan along with salt, Mix lightly for 1 minute. Add butter and remaining coriander leaves and mix well.

Step 5

Cut bread toasts into triangles.

Step 6

Garnish with a coriander sprig and serve hot with toast triangles.
