|
Famous burmese dish made with chicken cooked in coconut gravy, served with noodles and other condiments

| INGREDIENTS |
|
Chicken, cut into pieces 800 grams Oil 1/2 cup Turmeric powder 1/2 teaspoon Onions, finely chopped 3 medium Garlic, crushed 4 cloves Ginger, chopped 1 inch piece Cinnamon 1 inch stick Bay leaf 1 Coriander powder 1 teaspoon Cumin powder 2 teaspoon Red chilli pepper 1 teaspoon Chicken stock 8 cups Salt to taste Noodles 500 grams Gram flour (besan) 2 tablespoons Fish sauce 1 tablespoon Coconut milk 2 cups Condiments Hard boiled eggs, peeled and quartered 3 Onions, thinly sliced 2 Spring onions, thinly sliced 3 Lemons, cut into wedges 2 Fresh coriander leaves 3 tablespoons Red chilli flakes 1 teaspoon Garlic, sliced diagonally and fried until golden 12 |

METHOD
Heat oil in a pan. Add turmeric powder and onions and sauté till onions soften.
Add garlic and ginger and sauté for a minute. Add cinnamon and bay leaf and continue to sauté.
Add chicken, coriander powder, cumin powder and red chilli powder and mix. Add chicken stock and salt and bring the mixture to a boil. Cook till the chicken is almost done.
Meanwhile boil the noodles till just done. Drain, refresh and drain again and set aside in a bowl.
Mix gram flour in quarter cup of water and add to the chicken. Stir and cook till the gravy thickens.
Add fish sauce and mix. Add coconut milk and stir and let it heat through. Pour the chicken gravy over the noodles.
Serve the condiments in separate bowls. Each person then can add the condiments as per their choice and eat.
Recipe Tip : Chef’s tip: for vegetarians you can replace the chicken with paneer or mushrooms or mixed vegetables.
