2016 has been a brilliant year for food. More sustainable, environment friendly food options and people actually beginning to think about what they put into their systems. A look at the top 10 food trends that took over 2016.

Year of the vegetarian

Right from spiralized veggie zoodles to grilled cauliflower ‘steak’, 2016 has been the year of the veggie swap in! High protein super bowls and main meals that are completely vegetarian have been the trend of the season and doesn’t seem like it’s going away anytime soon.

Hellow Hawai!

You can always remember 2016 as the year where sushi was dethroned by its Hawaiian equivalent poke! Restaurateurs across the globe have put delicious spins to the traditional sesame and soy cured tuna salad. Something you should watch out for in 2017 as well! 

Get Wasted

Transforming discards into delicacies has been hot on the culinary scene of 2016. Chefs have pushed the creative boundaries and are serving up everything from tender stems, edible flowers and cleaned up roots of veggies. Aptly titled root to stem dining might we add that it is here to stay! 

Burn it up!

Words like charred, burnt and smoked have made appearances on several restaurant menus. The flavour profile that is derived from these is something that has managed to strike a chord with foodies. Whether it is chargrilled smokey meat or burnt garlic fried rice 2016 has seen an overload of it all yet no one is complaining!

The hotter the better

The hotter the better seems to have been the food funda for 2016. Sriracha, harissa, sambal and other spicy sauces have dressed and spiced up almost everything you can imagine. Harissa spiced wings, sriracha spiked slaw and the likes – 2016 definitely got the temperatures soaring in the kitchen!

While the concept of farm to table produce has been around for a while, 2016 also gave rise to the concept of fresh sustainable and organic meat. People are seeing more sense in having food fresh off the farm than having it packaged and frozen for days before consumption.

The word detox itself got a makeover in 2016. Sipping vibrant fruit and veggie infused water from a mason jar is the 2016 style statement for a healthy life style and everyone from Hollywood celebs to corporate heads are hooked!

When it comes to the superfood craze it is safe to say seaweed was to 2016 what kale was to 2015. With stories of its benefits breaking the internet all through the year – it’s not long before you can find this delicacy at your local grocery store!

Fried Chicken everyway!

2016 has seen fried chicken in every avatar. Restaurant chains and chefs pushing their creativity with innovative crusts and out of the box marinades to make sure good old fried chicken never gets boring. This trend is probably one of the few that meat lovers have totally digged this year!

Call it turmeric latte or golden milk – one of the hottest trends of 2016 will always remain good old haldi waala doodh for us! From coffee shop chains to food bloggers – everybody is jumping in and benefiting from our age old desi nuskha!
