Low Calorie Carrot Pickle
500 grams of carrots
500 grams of cauliflower
500 grams of turnips
500 grams of jaggery
1 small bottle of malt vinegar
1 small bottle of mustard oil
1 small packet of mustard powder
500 grams of lemon
250 grams of fresh turmeric
1 small bottle of sesame oil
2 large carrots
1 small packet of dry red chillies
1 small packet of fenugreek seeds
For faster preparation
Process the vegetables for gajar, gobhi and turnips. Process and marinate the lemons and set aside. Grate the carrots and set aside.
How to go about it
Start with the lemon pickle. Finish the turnip pickle and then finally the carrot pickle.
